Oblat

It is a versatile ingredient made primarily from potato starch, lecithin and vegetable oil. Manufactured entirely in Japan on the island of Hokkaido, it is designed to encapsulate active pharmaceutical ingredients in its very thin sheets. Since its incorporation into gastronomy, it has become a magical tool for many chefs; it is a paper-thin, transparent sheet with a very peculiar characteristic: it disintegrates in an aqueous medium, but remains intact in the presence of fat.

This unique property makes Oblat an unrivalled tool for creating light, almost transparent crispies in a wide variety of shapes, flavours and colours.

Why use oblat?

Using Oblat in your culinary creations transforms the dining experience by enabling the creation of light, almost transparent crunchies. Its ability to disintegrate in aqueous media while remaining intact in fats, coupled with its versatility in formats such as powder, rolls and large sheets, offers a wide range of shapes and flavours. Ideal for elevating your recipes and adding stunning visual elements to haute cuisine.
