What is an emulsion and what is it used for?
Emulsion is a technique for mixing two or more liquids that would not normally combine, such as water and fat, to create a homogeneous and stable mixture.
This process is essential in the preparation of a wide variety of traditional preparations, but in haute cuisine, it goes one step further and becomes an innovative technique which, with the incorporation of this new equipment, has also revolutionised the most avant-garde cocktail making, as well as allowing experimentation with new additives to create new recipes.
