How does food dehydration work?
Food dehydration consists of removing most of the water content from ingredients, preserving and intensifying their flavour. This process is carried out by re-circulating hot air through the food to reduce its moisture content, preferably without cooking.
Dryers allow precise control of the process, as they can be adapted to different types of products, from fruit and vegetables to meats and herbs. In fact, machines like our Excalibur Pro can work with different cycles at different temperatures, lower at the end of drying, to achieve optimum texture.
