Use of the Squasher in Mixology

What is the Squasher?
Squasher is a pressure emulsifier that helps to unify flavours and aromas contained in a bag, dissolving them homogeneously in a liquid.
This innovative machine comes from the world of analysis, and was presented and evolved in 2021 by Marc Álvarez (Sips Bar), 100%Chef and IUL, a company specialising in laboratory equipment based in Barcelona, which manufactures its equipment to offer advanced solutions with the highest technology.
What’s new in the 2024 Squasher?
This new Squasher model 2024 (white) brings with it several improvements over its predecessor (black):
- Lighting: Adds an attractive and spectacular touch, especially designed to impress customers.
- Larger paddles: Now measuring 14×7 cm², optimising the mixing process.
- Total pressure area: 28×14 cm².
- Automated time control: More accessible and precise.
- Light alarm: Notifies when the process is finished.
These new features make Squasher a more efficient and versatile tool.
How does Squasher work?
Squasher’s operation is simple but innovative:
- Preparation: Packs the liquid and solids into a special bag.
- Insertion: Insert the bag inside the machine and close it with the lever. You will see that the glass door has silicone rollers, which prevent the liquid from coming out of the bag at all times.
- Start: When closing, the system is activated. The blades act by pressing on the products with the same pressure, delicately extracting flavours and aromas without extracting the most acidic or bitter parts of some ingredients, and homogenising the contents.
- Process: Uses measured and exact pressure throughout the process, allowing very precise blending.
- Repetition: The paddles repeat the pressures hundreds of times per minute. The liquid acts as a solvent, soaking in the flavours of the ingredients.
- Emulsification: By emulsifying together with the air in the bag, a silky, long-lasting texture is created.
Did you know that the Squasher can create a very strong microfoam if the ingredients contain whipping or emulsifying agents such as egg white, quillaia, sucrose, coffee or lecithin?

With Squasher, you can prepare gins, rum, whisky, vodka, vermouth, tequila, juice, syrup, etc. Nothing can resist this machine. In addition, you can have your combinations weighed, packaged, classified and ready in the fridge, facilitating the process of preparing and decorating your glasses.
