The production of transparent ice is done by using special freezers that freeze water from above in a single direction, pushing impurities and air bubbles away from the freezing line before the water crystallizes.

Production of Transparent Ice
The alinia system has revolutionized the way premium ice is handled, as the result is characterized by its transparency, hardness, and slow melting rate.
Its purity and transparency are achieved by slowly freezing potable water in silicone molds at approximately -10 ºC for 24 hours under controlled hygiene conditions.
In this way, the pure components of the water freeze first, creating an environment where impurities, such as minerals, are not trapped in the finished ice.
The layered cooling system provides exceptional clarity by continuously pushing from the top, thus eliminating the microbubbles of air in the ice.
This system allows you to effortlessly produce ultra-clear, extra-dense, and ultra-pure ice, with almost zero impurities, which preserves the original flavor of beverages without diluting it.
Tempering and Handling Premium Ice
When ice is freshly taken out of the freezer it has a very low temperature, melting and contracting when it comes into contact with liquid at a room temperature, leading to cracking.
To prevent this and maintain its appearance in the drink, it is essential to leave it out of the freezer for several minutes before using it. This way, we achieve a beautiful ice that does not break or become opaque. In some cocktail bars, frost is removed with a knife, or a fan is used to blow air over the ice and raise its temperature.
Transparent ice in restaurants
Beyond its use in cocktail bars, transparent ice can be of great interest to restaurants, as its perfect and crystalline appearance adds significant value to the service, complementing the efforts of both the kitchen and the dining room.
An example is the distilled drink or glass served to conclude a tasting menu. This is where transparent ice comes into play: round, square, or diamond-shaped. This special touch makes a difference and enhances the experience. At this moment, the waiter has the option to mark the ice with the restaurant’s logo, offering an even more unique experience.

Our Custom Ice Markers
We offer ice marker to work on any shape and size of ice, including spherical markers designed for ice spheres of different dimensions. Additionally, when placing your order, you can choose between raised or recessed marking. Thanks to our experience, we can advise you and help you choose the best design and finish.
Once you send us your logo, keep in mind that very intricate drawings and very small letters can become confusing and lose their impact. We usually take between two and three weeks to deliver your custom marker. If needed, we can also work with advertising designs for beverage brands.
A more sophisticated option is our Yeti marker tray, made of anodized aluminum. This tray feature seven different shapes that can be combined, as they work with both raised and recessed designs. Their designs also adapt to various sizes, accommodating , collins pieces of up to 13 cm as well as square blocks of 5.5 cm.
The tray is supplied with a mat that collects excess water and drains at each part of its grid, allowing melted water to escape and preventing excessive overcooling. Additionally, like the previous options, it can be customized with your logo.
when using, it is important to temper the ice before repousse. If you want to use it repeatedly, we recommend warming the tray with lukewarm water for quicker results. Moreover, in busy bars where relief ice is prepared before opening hours, we recommend cleaning the excess water after pressing the embossing plate, ensuring it does not freeze again and affect the definition of the shapes. Once this is done, the ice can be stored in the freezer without issue until needed.
