In this way, the pure components of the water freeze first, creating an environment where impurities, such as minerals, are not trapped in the finished ice.

The layered cooling system provides exceptional clarity by continuously pushing from the top, thus eliminating the microbubbles of air in the ice.

Tempering and Handling Premium Ice

When ice is freshly taken out of the freezer it has a very low temperature, melting and contracting when it comes into contact with liquid at a room temperature, leading to cracking.

To prevent this and maintain its appearance in the drink, it is essential to leave it out of the freezer for several minutes before using it. This way, we achieve a beautiful ice that does not break or become opaque. In some cocktail bars, frost is removed with a knife, or a fan is used to blow air over the ice and raise its temperature.

A more sophisticated option is our Yeti marker tray, made of anodized aluminum. This tray feature seven different shapes that can be combined, as they work with both raised and recessed designs. when using, it is important to temper the ice before repousse. If you want to use it repeatedly, we recommend warming the tray with lukewarm water for quicker results. Moreover, in busy bars where relief ice is prepared before opening hours, we recommend cleaning the excess water after pressing the embossing plate, ensuring it does not freeze again and affect the definition of the shapes. Once this is done, the ice can be stored in the freezer without issue until needed.
