How to choose wood for smoked dishes?​

For smoking, woods should have a low resin content and be properly seasoned to ensure longevity, while still retaining the capacity to release the right amount of moisture during the smoking process. The finest choices are carefully selected hardwoods, such as Fagus (beech) and Quercus (oak) species. The type of wood chosen plays a decisive role in shaping the aroma and flavor profile of the food, allowing chefs to create nuanced, distinctive smoky notes.

In this case, the flavouring will be too aggressive, spicy, not very aromatic, with toxins and even annoying for the diner.
