OCOO – Artichoke by Disfrutar
With OCOO’s cooking technology, artichokes become a new field of culinary exploration in the hands of Oriol Castro, Eduard Xatruch and Mateu Casañas from the Disfrutar restaurant (Barcelona).
This double-cooking, automatic pressure cooker allows you to work at a controlled temperature and low pressure, without losing steam, concentrating aromas and enhancing the natural flavour of the ingredient. The result is a texture and depth of flavour that is difficult to achieve with traditional methods.
