We’re sharing on our channel a fresh dish created by our friends Oriol, Eduard, and Mateu at their restaurant Disfrutar in Barcelona, which showcases all the ingredients of their cuisine: flavour, quality of ingredients, and innovation.
One of the most innovative elements of the dish is the spectacular mandarin reduction made in the Girovap, which, prepared at 30°C, preserves all the properties of the citrus and provides a dense, shiny texture.
