It can also be refrigerated to improve the quality of the result, and the cold also allows the coagulation of fat particles or some residues, giving them weight and volume to facilitate their separation.
Designed for very precise work, CentriCook Chiller separates the juices from the fibres in suspension and concentrates them at the base, where the purest essence of the food remains with a silky and almost impalpable texture (the ointment). The juice or clarified juice remains in the upper part, very useful in cocktails to obtain clarified cocktails without floating particles.
It includes 4 containers of 250 ml and clarifies 1 litre in approx. 10 minutes.
Its main advantage over the use of pectinases or thickeners is that the process is much faster, it is not necessary to heat the product, it does not accentuate the acidity and it preserves from oxidation. In addition, the cold preserves the colour and browning and improves any oxidation process in the fruit. The final product obtained has a more natural taste.
