How to Prepare a Whipping Siphon for Foams Before Its First Use

Using a siphon to create foams in both cooking and mixology requires knowing how to assemble and disassemble it properly. Understanding how it works ensures safe handling and the best possible results.

How to Use a Siphon

100%Chef siphons are made entirely of stainless steel, with a chrome-plated, airtight head composed of several parts: valve, rubber gasket, decorating tip, and gas holder. N2O gas cartridges (nitrous oxide) are essential for these aerated preparations. Each non-reusable cartridge allows you to whip up to ½ liter of product instantly.

Preparing the Siphon for First Use

  1. Thoroughly clean all parts before assembly.
  2. Insert the central valve into the head, making sure the spring is correctly positioned (check the groove on the head).
  3. Screw on the nozzle and press the lever to ensure the spring fits properly and moves smoothly. This step is crucial, as once the head is screwed on, the valve cannot be adjusted.
  4. Check that the valve opening is facing forward and that the small gaskets are in good condition. Place the silicone gasket on the head.

Tip: Always strain your ingredients to avoid clogging the valve. For fat-based mixtures, gently warm them to facilitate straining.

Filling and Charging the Siphon

  1. Fill the siphon up to the maximum fill line.
  2. Secure the head without excessive force, always holding the silicone ring, never the lever, to avoid deforming it.
  3. For a ½-liter siphon, use one N2O cartridge; for a 1-liter siphon, use two cartridges. Depending on the density of the preparation, an extra cartridge may sometimes be required.

Note: For fizzy or slightly acidic flavors (like soda), CO2 cartridges can be used. These are ideal for fruit purées and compotes. CO2 does not create foam but forms a gel with bubbles depending on the product and temperature.

Gas Application

  1. Unscrew the cartridge holder and insert the gas cartridge.
  2. Keep the cartridge slightly tilted and tighten until the gas is fully released into the siphon.
  3. Shake the siphon, and if needed, add a second cartridge.

When the siphon empties, the gas makes a characteristic sound. Once it stops, unscrew the cartridge holder to prevent oxidation, and cover the outlet with the cap.

Storage and Serving

  • Shake the siphon before use.
  • Store cold foams in the fridge.
  • For hot foams: use a water bath up to 62 °C for egg white-based foams and 70 °C for starch-based foams. Never exceed 80 °C.
  • To serve, shake again and dispense the foam with the siphon upside down, controlling the pressure carefully.
  • Never open a siphon that still contains gas.

Cleaning and Maintenance

Proper cleaning is key to prolonging your siphon’s lifespan:

  1. Disassemble all parts and rinse under running water.
  2. Wash with a brush, mild soap, and water.
  3. Dry thoroughly and reassemble all parts.

Special attention:

  • Clean valves, threads, and rubber gaskets carefully.
  • Avoid hitting the lever; it’s one of the most delicate parts.
  • Never leave the siphon closed if it’s not in use.

Tip: If the siphon still contains product but no gas, add a new cartridge to better preserve it and prevent oxidation or fermentation.

Labeling

If you have multiple siphons, label each one with the date of preparation and the type of foam inside.

Safety

  • Never open a siphon that still contains gas.
  • Do not exceed 80 °C.
  • Never freeze the siphon or store products in the freezer.
  • Keep gas cartridges away from heat sources.
  • Use only original parts and avoid forcing threaded connections.
