The evolution of Pacojet 4

The pacotisation® process was invented by Wilhelm Maurer, a Swiss engineer living in Brazil, in the early 1980s, while he was trying to design a new ice cream machine. In 1988, Maurer sold the patent to Gregor Staub and, in 1992, launched Pacojet, the high-quality machine that has become a bestseller in restaurants around the world.
For more than 30 years, Pacojet has been synonymous with the highest quality, added value, unlimited creativity and a wide variety of options for creating unique dishes. In fact, it has always had the vision of being a brand for professionals and, since its inception, has been present in the best kitchens in the world without exception.
With a successful model, the brand has always maintained its focus on continuous improvement and innovation. As a result, the Pacojet 1, Pacojet 2 and Pacojet 2 Plus models, as well as other more promotional models, have led the brand not only to be a pioneer in technology, but also to maintain its business leadership.
Taking into account the experience accumulated over 25 years with thousands of users, the design of the new Pacojet 4 starts from scratch, completely revamping its chassis, drive system, software and beakers.


Comparison of Pacojet 4 versus previous models
If we compare Pacojet 4 with previous models, we see a series of very important changes that improve the machine’s ease of use and cost-effectiveness.
Firstly, we highlight its revamped, modern and impeccable image, which gives it a more technical look and offers a striking layout for open kitchens and workshops.
1. Colour touch screen and data logger
Its large colour touchscreen offers a comprehensive menu that is well organised by function and provides direct access to all its features. Its outstanding data logger allows you to archive and record recipes, sorting and classifying them according to their use and frequency.
Its powerful and fast memory stores and records all the steps taken so that you can learn from your mistakes, as well as providing technical support with valuable information for maintenance and details that need to be improved in future versions.
Working on this screen is a real pleasure, as its layout is very intuitive and allows you to access any function with a single click without having to scroll through screens.

2. Low noise level
When it comes to its most notable new feature, we must highlight the extremely low noise level during the pacotisation® of each glass, especially on the first pass with the glass freshly taken out of the freezer, which is a far cry from its predecessors.
If you were already a Pacojet user, this feature will surprise you, as the sound insulation of this model is an incredible advance and it is no longer a nuisance to have your Pacojet 4 on standby.
3. Ultra Speed Option
Another new feature is the Ultra Speed option, capable of packaging® a ten-serving cup of ice cream in just 90 seconds, greatly facilitating preparation before service and increasing production.
Working with overpressure is something to highlight in the world of ice cream, as it allows for overrun of up to 30% depending on the product. The texture is more similar to that of ice cream, and it is possible to achieve a creamier and silkier result.
Repeating the most common actions allows you to be more carefree and makes your work easier, so this mode is great and adds to recipe recording as a key functional element.
4. Guided cleaning system
With a new guided cleaning system, it greatly facilitates sanitisation after use and maintenance, leaving behind the cumbersome brush system of the previous model.
Cleaning Tabs have been specifically designed for foam-free cleaning of blades and internal shafts, leaving no soap or limescale residue. In accordance with HACCP standards, your machine is treated with an antibacterial product and ready to return to work with maximum safety.
5. Polycarbonate beakers
Their new polycarbonate beakers are practically indestructible. They replace metal beakers and offer durability, transparency and a reasonable price compared to the chrome beakers used in previous models. Thanks to their transparency, you can easily see how many portions are left in the beaker and the product being processed inside.
If you own an earlier version of Pacojet, remember that you can also use its chrome beakers, but you must use a different beaker holder than the one for Pacojet 4 or your old machine.

Now in Spain, its official technical service, completely revamped, is carried out by the experienced team at 100%Chef’s Technical Assistance Service (SAT) and offers a premium service system for its customers. The official Pacojet website has been completely revamped, reflecting the Swiss company’s new image.
On it, you can access manuals in several languages, technical data sheets, spare parts and accessories catalogues, among other resources. In addition, on our website www.pacojet4.com you will find more than 300 sample recipes, as well as training material to help you get the most out of your Pacojet.
